Ingredients
- 4 large apples (Honeycrisp, Gala, or your favorite baking variety)
- 1 cup Blueberry Pecan Ginger TogaNola Clusters
- 2 tablespoons maple syrup
- 2 tablespoons melted coconut oil or butter
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger (optional for extra warmth)
- Pinch of salt
- Optional: Vanilla ice cream or whipped cream for serving
Instructions
1. Preheat the Oven: Preheat your oven to 350°F (175°C).
2. Prepare the Apples:
-
- Slice off the top 1/2 inch of each apple.
- Scoop out the core and some flesh, creating a hollow center (be careful not to pierce the bottom).
3. Make the Filling: In a bowl, combine TogaNola, maple syrup, melted coconut oil or butter, cinnamon, ground ginger, and a pinch of salt.
4. Stuff the Apples: Spoon the granola mixture into the hollowed-out apples, packing it tightly.
5. Place the apples in a baking dish and add about 1/4 inch of water to the bottom of the dish.
Cover loosely with foil and bake for 20 minutes.
6. Remove foil and bake for an additional 10–15 minutes until the apples are tender and the granola is golden.
7. Serve: Let cool slightly. Serve warm, optionally topped with vanilla ice cream or whipped cream.
Flavor Notes: The Blueberry Pecan Ginger shines with its large, crunchy pecans, subtle spice from ginger, and bursts of blueberry, creating the perfect sweet and textured filling for these baked apples!
